
Ingredients
| 1 kg | Ocean's Greenshell™ Mussels (about 24) | 2.2 lbs. |
| 60 ml | Green onions, sliced | 1/4 cup |
| 30 ml | Garlic, finely minced | 2 tbsp. |
| 30 ml | olive oil | 2 tbsp. |
| 30 ml | Cold butter, diced in 1/4 inch pieces. | 2 tbsp. |
| 125 ml | White wine | 1/2 cup |
| 3 | Medium sized fresh tomatoes, diced | 2 cups |
| 125 ml | Chopped parsley | 1/2 cup |
| 30 ml | Lemon juice | 2 tbsp. |
| Saffron, salt and pepper to taste |
Directions
| 1 | In a large pot or deep pan with a lid, sautee the onions and garlic in oil on low heat until transparent, add saffron, salt and pepper to taste. |
| 2 | Turn the heat to high, add the wine and diced tomatoes, bring to boil. |
| 3 | Add the mussels, cover with a tight lid, and toss occasionally for even cooking, Cook until mussels are fully cooked, approximately 3-6 minutes. |
| 4 | Arrange mussels in bowl, leaving the remaining liquid in the pot. |
| 5 | With the heat on med, bring the liquid to a simmer, add the parsley, lemon juice, and cold butter, stir sauce until butter is melted. Pour over mussels and serve with crusty bread. |
