Chunky Tuna and Cucumber Salad

Ingredients

500 g ripe tomatoes 1 lb.
1 seedless cucumber 1
60 ml red onions, diced 1⁄4 cup
150 ml bottle Greek dressing 2/3 cup
  salt and pepper to taste  
2 cans Ocean's solid Albacore Tuna (184g or 170g) drained 2 cans
125 g feta cheese, crumbled 1/2 cup
250 g black Greek olives 1 cup
15 ml capers, optional 1 tbsp.
1/2 lemon, cut into wedges 1/2

Chef's Tips

Great as a side dish to many main course items.
Excellent as garnish for regular tossed salad to dress it up.

Directions

1 Cut tomatoes into 1 inch (2.5cm) chunks. Cut cucumbers into similar size pieces.
2 Toss tomatoes, cucumbers and onion with enough dressing to coat lightly. Adjust seasonings if necessary. Divide onto rimmed plates.
3 Break tuna into chunks.
4 Sprinkle feta and tuna over salad. Top with olives and capers (if using). Garnish with a lemon wedge.
