1 clove garlic, minced or pressed 1
125 g mushrooms, thinly sliced 4 oz.
25 ml finely chopped onion 2 tbsp.
5 ml olive oil 1 tsp.
25 ml grated parmesan cheese 2 tbsp.
10 ml Dijon-style mustard 2 tsp.
    salt and pepper  
  1 10 oz. package frozen chopped spinach, thawed and squeezed dry 1
  4 Flounder or Sole fillets (about 4 oz. each) 4

1. Combine garlic, mushrooms, onion and olive oil in a microwave-safe bowl, cover and microwave on HIGH (100% power) for 2 minutes, stirring once; drain liquid. Add cheese, mustard, salt, pepper and spinach and mix well.

2. Rinse fish and pat dry. Lay fillets on work surface, nice looking side down. Spread spinach mixture over, leaving 1 inch clear at each end. Roll up beginning at thicker end and set seam-side down in a lightly oiled microwave baking dish.

3. Cover and microwave on HIGH until opaque through center (cut to test) 4-5 minutes. Rotate dish a quarter turn halfway through cooking time. Let fish stand, covered, for a few minutes before serving.
